Southern Biscuit Sliders.

Yesterday I was in the MOOD for some southern food. I'm not even going to pretend that I'm half the cook my southern grandmother is buuuutttttt...... these were pretty awesome. I made them smaller to make it easier for Jonah to handle them. I ate 4. To make myself feel better about that, I declared, "These aren't normal sized biscuits. So it's ok. They're sliders." Cause you can eat more of things if they're fun sized.




Southern Biscuit Sliders :

21/2 cups all-purposeflour

2 1/2 teaspoonsbaking powder

1/2 teaspoon kosher salt

1 tablespoon granulated white sugar

1/2 cup cold unsalted butter, cut into small pieces

3/4 cup milk

1 large egg, lightly beaten

In a large mixing bowl, whisk together the flour, baking powder, salt and sugar.

Cut the butter into the dry ingredients until the mixture resembles coarse crumbs

Add the milk and slightly beaten egg and stir until just combined. (The texture should be sticky, moist and lumpy.)

Place mixture on a lightly floured surface.Kneadthe dough gentlyuntil it comes together and is a smooth dough.

Roll out dough to about a 1/2 inch thickness.

Cut out biscuits with the bottom of a small glass (or the top of a mason jar)

Place on greased baking sheet and brush the tops with the beaten egg and milk mixture and bake for about 10 -15 minutesor until the tops are golden brown.

Makes about 10 - 2 1/2 inch (6 cm) biscuits.
